Midnight Diner Curry Ramen

Inspirited by Midnight Diner, this curry ramen makes leftover curry an entirely new dish. Made from a beef Japanese-style curry rather than the pork curry used in the show, this dish is simple and delicious. A little overview of Midnight Diner first. It is a show that revolves around the everyday lives of the average person in Japan and the diner where they congregate for a simple meal. However, the owner of the diner, whose menu is small, will make anything the customer wants as long as he has the ingredients. In the episode featuring the curry ramen, he makes the ramen portion with a salt flavored instant ramen and tops it with his homemade pork curry. I however, live in Korea and am a Shin ramen girl so, I used that instead of salt ramen.

This curry ramen is rich, silky and perfectly satisfying.

Ingredients

800 ml (4 c) water

1 t rice vinegar

2 packages of ramen

3 c leftover curry, heated

Recipe Know-how

1.      Over high heat, add the water and vinegar to a medium pot.

  • Add the flakes and seasoning bags from the ramen package.

  • Cover and bring to a boil.

  • Add the noodles and cook according to package directions.

Using chopsticks or tongs, gently shake the noodles until they begin to separate. Continue gently shaking and lifting the noodles from the broth occasionally while cooking.

  • Divide the noodles and broth between 2 bowls.

  • Pour the curry over half of the noodles.

2.      Serve with kimchi.
