Scallion Fried Egg

Take your fried eggs to a new level with the simple addition of a few scallions.

Scallion Fried Egg

Serves 3

Simple side dish with a bowl of rice or topping fried rice. As the scallions brown, they develop a distinctly rich flavor that is incredibly addictive.

Ingredients

3 large eggs

2 t vegetable oil

50g (3) scallions, sliced

.50 - .75 t kosher salt

Recipe Know-how

1.      Over a medium-high, heat the oil in a small non-stick pan.

  • Add scallions. Cook until they begin to sizzle and become fragrant 30 – 45 seconds.

  • Sprinkle salt over the scallions.

Use more or less salt to your taste

  • Crack eggs evenly spaced directly onto scallions.

  • Cook 2 - 4 minutes or until the whites are set and the scallions brown.

These cooking times yield an over easy yolk. For a more well-cooked egg, cook longer.

2.      Serve.
