Crispy Spam breakfast sandwich with spicy mayo and sauteed onions on a sweet tender pineapple bun.

Short-order style breakfast sandwiches will always hold a special place in my heart as a New Yorker. For this breakfast sandwich, I used Spam as the requisite meat. The salty rich slices of meat are cooked till crisp on the outside and tender and succulent inside. Placed on a bed of spicy greens and topped with sauteed onions (the secret to making a simple breakfast sandwich next level), fried eggs and cheese. A spicy gochujang mayo finishes off everything before being topped with the crunchy, top bun of a pineapple bun. This sandwich has it all, it’s creamy, spicy, meaty and has a hint of sweetness and crunch that made me wonder why I’d never eaten this before. You can find a recipe for homemade pineapple buns here.
Ingredients
Mayo
2 T mayo
1 T ketchup
1.5 t gochujang
0.50 t dried parsley
0.25 t onion powder
0.25 t garlic powder
0.25 – 0.50 t Tabasco sauce
0.25 t Worcestershire sauce
0.25 t gochugaru
1/8 t MSG – optional
Fillings
4 slices of Spam
1 medium onion, cut into 1 in thick rings
2 t butter
4 large eggs
Kosher salt and ground black pepper to taste
4 slices of cheese
Finishing
2 pineapple buns, split and toasted (recipe here)
40g (2 handfuls) chicory or other peppery green
Recipe Know-how
1. In a small bowl, combine the mayo ingredients mixing well.
Taste for seasoning and adjust as desired.
Refrigerate until needed.
2. In a medium-sized, cold pan, place the slices of Spam.
Place the pan over medium heat and cook for 3 – 4 minutes or until brown and crispy on both sides.
Remove to a plate and keep warm.
Add the onions to the pan with the Spam fat.
Cook with a pinch of salt and pepper until softened and lightly browned, about 3 – 4 minutes longer.
Remove to the plate with the Spam slices.
Use the butter to cook the eggs to your liking seasoning with salt and pepper to taste.
If cooking scrambled eggs, cook 2 at a time using half of the butter. Repeat with the 2nd set of eggs.
Top the eggs with the cheese using one slice of cheese for 2 eggs.
For fried eggs, place 1 slice of cheese in between the two eggs.
For scrambled eggs, cook the eggs into a patty and place 1 slice of cheese in the middle, folding the sides over the cheese.
3. Place the bottom buns on plates and spread ¼ of the mayo on each bun then top with the chicory.
Place two pieces of Spam atop the chicory and top with the onions and a slice of cheese.
Top with the eggs and half of the remaining mayo.
Place the top of the bun on the sandwich.
4. Serve.
