Spam Over Rice - Spam Deopbap

This Spam deopbap is very similar to oyokodon. soft onions in a sweet, salty broth paired in this case with the gentle spice and fattiness of the Spam. I like to make this very onion forward with the addition of the scallions whose freshness balances the Spam very nicely.
Ingredients
200g (7-oz can) Spam, cut into bite sized diced
200g (1 medium) onion, sliced with the grain .25 in thick
2 garlic cloves, minced
3 eggs, lightly beaten
30g (3) scallions, sliced
Broth
200 ml (1 c) water
3g (.5 t) ginger, grated
5 T soy
5 T mirin
3 T sake
1.5 T sugar
Finishing
Freshly cooked Dashima rice or plain rice
Recipe Know-how
1. In a medium mixing bowl, combine broth ingredients, stirring until the sugar has dissolved. Set aside.
2. In a cold, medium saute pan add Spam. Place over medium heat.
Saute, tossing occasionally for 3-5 minutes or until lightly browned.
Add onions, and garlic. Saute 45 seconds.
Add broth. Cover and bring to a boil.
Reduce heat to low and simmer for 7 minutes.
Increase heat to high. Remove cover. Bring to full boil.
Quickly pour the eggs across the surface of the broth and sprinkle with scallions. Cover and turn heat off.
Allow to set 2 minutes or until the egg is cooked to your liking.
The eggs should be just set and silky in texture.
If the eggs are not cooked to your liking after the allotted time, Turn the heat to low and allow to continue cooking another 30 seconds or until cooked to your liking.
Do not allow the liquid to come to a full boil or the eggs will overcook.
3. Evenly divide the topping over hot rice being sure to add broth to each bowl.
4. Serve immediately.
