Spicy Tuna Stew

This simple stew is a delicious way to use tuna in a new way. It is quite addictive and tastes even better the next day.

Ingredients

Broth

1,000 ml (5 c) water

350g (1 large) onion, sliced with the grain

60g (3) scallions, sliced

60g (3 T) gochujang

24g (2 T) gochugaru

30ml (2 T ) soy

30ml (2 T) mirin

30ml (2 T) fish sauce

15ml (1 T) sesame oil

15g (1 T) sugar

13g (2 t) doenjang

5g (1 t) ginger, minced

2g (6cm) dashima - optional

2g (0.50 t) salt

2g (0.50 t) black pepper

2 cheongyang chili or serranos, sliced

1 red chili, sliced

6 garlic cloves, minced

Fillings

400g (about 2 medium) potatoes, cut into .5 in cubes

300g (2- 5oz cans) canned tuna, drained

95g (0.50 c) canned corn, drained - optional

Recipe Know-how

1.      In a medium pot, add all of the broth ingredients. Bring to a boil.

  • Boil broth for 15 minutes covered.

  • Remove dashima.

  • Add potatoes. Boil 10 minutes.

  • Add tuna and corn. Boil 10 minutes more uncovered.

2.      Serve with rice.
