Spicy Tuna Stew - Chamchi Jjigae

Turn canned tuna into a hearty, flavorful stew sure to become a new favorite.

Spicy Tuna Stew

Serves 4

This simple stew is a delicious way to use tuna in a new way. It is quite addictive and tastes even better the next day.

Ingredients

400g (about 2 medium) potatoes, cut into .5 in cubes

300g canned tuna, drained

95g (.5 c) cammed corn, drained - optional

Broth

1,000 ml (5 c) water

350g (1 large) onion, sliced with the grain

3 scallions, sliced

2 cheongyang chili or serranos, sliced

1 red chili, sliced

6 garlic cloves, minced

5g (1 t) ginger, minced

2g (6cm) dashima - optional

3 T gochujang

2 T gochugaru

2 T soy

2 T mirin

2 T fish sauce

1 T sesame oil

1 T sugar

2 t doenjang

.5 t salt

.5 t black pepper

Recipe Know-how

1.      In a medium pot, add all of the broth ingredients. Bring to a boil.

  • Boil broth for 15 minutes covered.

  • Remove dashima.

  • Add potatoes. Boil 10 minutes.

  • Add tuna and corn. Boil 10 minutes more uncovered.

2.      Serve with rice.
