Wasabi Slaw

A light, fresh slaw to rival the traditional.

Wasabi Slaw

Serves 3-4

A simple slaw perfect as a side dish year-round.

Recipe Tips:

1. I prefer an acidic vinaigrette/dressing so I use less oil. Adjust the dressing to your taste.

Ingredients

460g (about 1 lb) white cabbage, thinly sliced

175g (about 1/3 lb) carrots, julienne

60g (about ½ large) red or yellow bell pepper, julienne

2 scallions, sliced

Dressing

4g (.75 t) ginger, grated

1 garlic clove, grated

2 T rice vinegar

1 - 3 T neutral oil

1.5 - 3 t wasabi

1 t soy

.5 t Dijon mustard

.25 t salt

1/8 t ground white pepper

Recipe Know-how

1.      In a small mixing bowl, whisk all dressing ingredients until well combined.

  • Taste dressing adjusting wasabi, vinegar, oil and salt to taste. Set aside

2.      In a large mixing bowl, add vegetables. Toss well with dressing.

  • Refrigerate at least 1 hour prior to serving.

3.      Serve.
