Seasoned eggs, crisp salty Spam and a spicy tangy sauce to bring it all together.

This dish makes a wonderful light meal for a late night. All the components come together in less time than it takes to cook a pot of rice. Be sure to add the sesame seeds on top, their fragrance is what takes the dish to the next level. Serve it with vinegared cucumbers for as quick refreshing side dish.

Recipe Tips:

1. This dish was originally created based on using a 200g can of Spam. I do not think this size is available in the US. But to offset this, a larger 340g (12-oz) can of Spam that I know is available can be used with no problem.

2. The gochujang sauce makes enough for 4 servings. You can either use a whole 340g (12-oz) can of Spam and double the eggs to serve 4 people or refrigerate the remaining Spam and cook the dish again the next day.

Ingredients

Gochujang Sriracha Sauce

2 T gochujang

3 - 4 t Sriracha or Tobasco

2 t vinegar

2 t soy sauce

2 t ketchup

1 t water

Crispy Spam

200g (about 1/2 a 12-oz can) Spam, cut into 0.25 - 0.50 in cubes

Eggs

4 large eggs

1 garlic clove, grated

2g (0.50 t) ginger, grated

1 T mirin

1.5 - 2 t soy

0.75 t kosher salt

0.25 t ground black pepper

1 T butter

Finishing

2 portions of freshly cooked rice

1 scallion, thinly sliced

1 t toasted sesame seeds

Recipe Know-how

1.      Put two portions of rice to cook in your preferred fashion.

  • 10 minutes prior to the rice being ready, begin Step 3.

Make the sauce while the rice cooks.

2.      In a small bowl, combine sauce ingredients, mixing well.

  • Taste sauce adjusting spice level as desired with more sriracha or gochujang.

  • Set aside.

Crispy Spam

3.      Place spam in a cold medium-sized non-stick pan. Place over medium heat.

  • Cook for 5 – 8 minutes tossing occasionally until all sides are well browned and crisp.

While cooking, monitor the heat so the spam continues to crisp and not burn.

Continue on to Step 4 while the Spam cooks.

  • Remove cooked Spam to a paper towel-lined plate.

  • Pour any oil into a heat safe pan and reserve.

Do not wash out the pan it will be used to cook the eggs.

Finishing

4.      In a small mixing bowl, beat together the eggs and seasonings.

5.      Scoop a serving of rice onto 2 plates and sprinkle with sesame seeds.

6.      Heat the medium pan over high heat, add half of the butter and 0.50 t of the reserved Spam oil. Swirl the pan to coat.

The pan should be very hot for cooking the eggs. The whole process should take no more than 30 seconds to 1 minute.

  • Add half of the beaten eggs to the pan.

  • Using a heat-proof spatula, pull the cooked egg to the center of the pan. Swirl the pan gently to move uncooked egg onto the surface of the hot pan.

Ideally, the eggs should not brown to prevent this, you can intermittently, remove the pan from the heat to prevent this.

  • Continue pulling in cooked eggs forming large curds and swirling until the eggs are cooked.

  • Immediately place over rice.

The resulting egg “omelet” may still look slightly damp on top. If you desire to cook this, flip the “omelet” to the other side and allow 10-15 seconds to finish cooking.

  • Repeat immediately with the remaining egg.

7.      Divide the cooked Spam between the two plates.

  • Top with scallions, sesame seeds and sauce.

8.      Serve with remaining sauce on the side.
