Garlic and herb sauteed tomatoes to accompany any meal.

Wilted Tomatoes

Serves 2-3

This easy vegetable side is one of my go-to items for weekend bunch especially when eggs are involved. These delicious jewels are however multipurpose and delicious with roasted chicken and fish dishes.

Recipe Tips:

1. The tomatoes are done when the skins begin to split and the tomatoes soften slightly.

2. Do not overcook the tomatoes or you will have tomato sauce.

Ingredients

740g (a little less than 1.75 lbs) cherry tomatoes

7 garlic cloves, minced

2 scallions, sliced

1 T olive oil

2 t dried parsley or 3 T fresh parsley, chopped

.5 t kosher salt

.25 t ground black pepper

Recipe Know-how

1.      In a medium saute pan over medium high heat add oil, garlic, scallions and parsley.

  • Saute 1-2 minutes or until fragrant.

  • Add tomatoes, salt and pepper. Lower heat to medium.

  • Saute 6-7 minutes, tossing occasionally until tomatoes just begin to burst.

  • Taste for seasoning adjusting salt and pepper as necessary

2.      Serve.
