Soy Maneul Jjeong - Soy Garlic Scapes

In this quick side dish, the garlic scapes are sauteed to brown slightly then braised in a sweet and savory soy until the sauce thickens and coats the vegetable. The garlic scapes remain slightly crisp while also having the tender sweetness of a braised vegetable.
Ingredients
Sauce
4 T soy sauce
2.5 T maesil
1.5 T soju or mirin
2 t fish sauce
1 t rice syrup or honey
0.50 t kosher salt
Saute
1 T sesame oil
454g (1 lb) garlic scapes, cut into 2 – 2.5in lengths
7g (1.5 t) ginger, minced
0.75 t ground black pepper
Finishing
Toasted sesame seeds
Recipe Know-how
1. In a small bowl, combine the sauce ingredients mixing well. Set aside.
2. In a large saute pan heat the sesame oil over medium-high.
Add the garlic scapes and saute for 2.5 minutes tossing occasionally.
Add the ginger and pepper and continue to cook for 1 minute longer.
Add the sauce and bring to a boil.
Reduce to a simmer and cook for 5 – 7 minutes or until the sauce has thickened and coats the vegetables.
Taste and adjust seasoning as desired.
3. Serve with a sprinkle of sesame seeds.
