This simple side dish comes together in minutes and tastes delicious with rice. Tender crisp pieces of maneuljjong or garlic scapes are tossed in a garlicy sweet and spicy dressing. The herbaceous garlic flavor of the garlic scapes compliments the dressing perfectly.
Ingredients
500g (a little more than 1 lb) garlic scapes, ends and bud trimmed, cut into 2.5 in lengths
4 garlic cloves, minced
2 T gochujang
4 t apple cider vinegar
4 t maesil
4 t sesame oil
4 t yondu or soy sauce
1 t fish sauce
0.50 t gochugaru
0.25 t ground black pepper
Pinch of ground sancho pepper
Recipe Know-how
1. Bring a medium-sized pot of water to a boil.
Add 2 t kosher salt and garlic scapes.
Boil for 2 minutes.
2 minutes for thin garlic scapes yields a tender crisp result. For thicker garlic scapes or for a softer texture, cook the garlic scapes longer as necessary.
Drain and run under cold water for 1 minute.
Allow to continue draining to remove as much water as possible.
2. In a large mixing bowl combine the remaining ingredients.
Add the drained garlic scapes and toss to coat well.
Taste for seasoning and adjust as desired.
Refrigerate for 30 minutes.
3. Serve topping with a drizzle of sesame oil and sesame seeds.
